Avocado Dressing

So. I woke up today. AND ITS HOT OUTSIDE. Summer.... AT LONG LAST... is here!!!

Ah... summer. Summer is SOOO the season for avocados. I'm sorry. I know some of you guys love fried avocado, avocado fries, cooked avocado...but I DO NOT. This weird-food-eatin' nutritionist just cannot get behind the cooked avocado trend. It tastes wrong. And I'm all for putting spinach in my chocolate protein shakes, but cooked avocado? NO WAY.

So let me count the ways I dooo love me some avocado. Avocado sliced with salt, guacamole, avocado diced on eggs. Gimme some of dat.

Which got me to thinking - how about using avocado for dressing?? Its the perfect creamy base but loaded with the healthiest fatty acids known to man. KETO PEEPS - I'm talkin' to you!! Avocado is a healthy fat where you can proudly proclaim, "Oh? This? Fat makes you phat."

This dressing can be used as a dip for raw veggies or seaweed crackers. It can also be used as salad dressing or a topping for tacos. Just sayin... you need this recipe!

Avocado Dip/Dressing

Makes 5 servings

40 calories, 2 gm fat, 2gm protein, 2 gm net carb

1/2 avocado

Juice of 1 lemon

2 dashes of hot pepper sauce

3 garlic cloves

6 oz non-fat Greek yogurt

1/4 teaspoon mustard

10 cilantro leaves

Optional: If you prefer your dressing thinner, you can add unsweetend almond milk

1. Combine and puree in a blender. Enjoy!
