Better for You Copycat TJ's Gone Bananas



Ya know I'm happy when I'm in Trader Joe's. Seriously. That place is the equivalent to my NIRVANA. Everything is affordable, so much of it is healthier-for-you and I have so manyyyy yummy go-to staples that I just cannot live without.


Such as? Everything But the Bagel Seasoning. Dark Chocolate Honey Mints. Cilantro Chicken Mini Wontons. Dried Mango. Frozen Edamame. Frozen Argetinian Red Shrimp (which is BY FAR the best frozen shrimp available ever in the world).


Ugh, TJ just makes healthy food SO fun. Anyways, last weekend I was in TJs racking up the grocery bill, piling my cart HIGH with delicious foods when I picked up a package of Gone Bananas. I've heard rave reviews about these delicious morsels, but decided instead to make them myself at home where I could:


1. Up the protein

2. Avoid soy lecithin

3. Up the fiber


This recipe takes a few moments of your time, but is SO delicious. I kept these in the fridge for about a week, eating 1-3 slices at a time for a delicious, healthy, filling treat that satiated my sweet tooth with JUST the right amount of sweetness.


The key is to choose a high quality chocolate. I used Lily's Chocolate Chips which are sweetened with stevia and have a whopping 12 grams of fiber per serving, but you can also melt any high quality chocolate bar such as Alter Eco's Dark Blackout. Mix with coconut oil and you have yourself the perfect chocolatey coating for any willing banana!

 


High Protein Dark Chocolate Frozen Bananas

creates 6-8 servings


1/4 cup plain Greek yogurt

1/2 cup Organic Dark Chocolate*

1 tablespoon coconut oil

2 bananas sliced


* I used Lily's Stevia Sweetened Chocolate Chips to reduce the sugar content


1. Slice the banana into small 1" thick discs and place small dollops of Greek yogurt on top of each slice. Place the banana slices on a small plate and freeze for 60 minutes at a minimum.


2. Once frozen, remove banana slices from the freezer. On a baking tray covered in wax paper, line up banana slices.


3. In a small saucepan, melt chocolate and coconut oil over low heat. Alternatively, you can melt chocolate in the microwave for 30 seconds. Stir and add coconut oil and let it melt.


4. Once melted, use a spoon to ladle melted chocolate on top of the banana slices, making sure to cover the bottom of the discs as well.


5. Store in the refrigerater in a tupperware.
