Nutty Asian Quinoa Salad

This salad. Ah. Its soooo delicious. I ate all four servings by myself in two days. I just couldn't stop eating it! Its sweet and savory... and its loaded with like every nutrient you could ever need to fight cancer, fight heart disease, fight diabetes. Its like. Superfood.

oh, i love when dinner is easy-peasy-limey-squeezy and delish!

Hi, I live in NYC in the summer and I don't have an air condition.


So. I am totally one of the 30 year old peeps out there still relying on their parents to lug their AC back and forth between seasons. In the winter - to mama and papa's house my dear AC goes to take a long winter's nap in their garage. In the summer...back to the steamy, hot city that never sleeps.


However, sometimes, it all of a sudden gets to be 95*F outside everyday and your parents are too gosh-darn busy to drop off your beloved AC. That's when things in this neck of the woods get sticky, sweaty and hot.


Not exactly the type of weather that makes you want to eat anything that's been remotely near a flame.


So while I await the return of my beloved AC, I have been noshing on this DELICIOUS quinoa salad. I totally got all jazzed up about quinoa after reading this article in BMJ about how quinoa is soooo totally nutritious for us. It decreases our risk of type 2 diabetes, heart disease, stroke, and all cause death. This is because it rocks out with its socks out ... AKA its a whole, intact grain rich in phytochemicals and antioxidants. In fact, this article suggests that whole, unprocessed grains (aka - not quinoa cereal or barley flakes but the WHOLE, INTACT grain) is actually healthier for us than potatoes!! I nearly fainted when I read that.

So, not like I'm running off to eat tons of grains now. Just sayin'. Quinoa ain't the devil. And homegirl has been lifting heavy things and needs carbs to increase muscle mass to boost metabolism and BURN FAT. Low carb isn't the only solution to fat loss. Its all about finding your CARB SWEET SPOT. The perfect amount to fuel fat loss and keep you energized and without cravings.


This delicious quinoa salad is savory and sweet...and totally left me satiated and craving free! The protein comes from vegeterian sources (and if you swap out the honey ... this can even be vegan!)


Warning: This salad is LOADED with veggies. Think about buying pre-shredded cabbage or get your food processor out to quickly chop and dice those veggies!

 


Nutty Asian Quinoa Salad

serves 4 as a main (or 8 as a side dish)


Salad:

1 cup quinoa, cooked

1 head broccoli, chopped

1 cup red cabage, shredded

1 cup green cabbage, shredded

1/2 red onion, diced

1 cup carrots shredded

1 cup strawberries, sliced and halved

3 tablespoons crushed hemp seeds

1/2 avocado, diced

optional: Lots of cilantro!


Nut Sauce:

1/2 cup almond butter or peanut butter

3 tablespoons honey

1/2 teaspoon red pepper flakes

Juice of half a lime

2 teaspoons soy sauce (not GF) or coconut aminos/tamari (GF)





1. In a small bowl, combine the ingredients for the nut sauce. Mix well.

2. In a large bowl, combine the ingredients for the quinoa salad. Mix well.

3. Drizzle nut sauce on top and mix continuously to coat the entire salad in the nut sauce mixture.

4. Serve on the side with some yummy grilled fish or eat as a delicious vegetarian, high protein entree!
