Stuffed Pizza Peppers



So... Brooklyn. Pizza. THE HORROR.


Every time I walk home from the gym or the grocery store, I walk by this AMAZING PIZZERIA. And when you're leaving the gym starved and exhausted, the pizza smell is somehow enhanced thirty-fold. Its dubious.


THEN, TO MAKE MATTERS WORSE, this dang pizzeria hung this HUGE sign that reads "TWO SLICES FOR $6." Like, c'mon. You're making delicious pizza economical? What's the deal here, people?


I resist. I resist every single time, folks, but it isn't easy. And I have to figure out ways to eat pizza flavors on the reg to keep myself strong (haha this is getting melodramatic, but its really so true). This is why I loveeee me some healthy recipes that taste like pizza without all the calories of pizza...





 

Pizza Pepper Bowls


4 red/orange/yellow peppers, tops cut off and seeds removed

1/2 jar sugar free tomato sauce (I love Classico's Tomato & Basil)

1/4 cup parmesan cheese

4 eggs

1 tsp oregano

1 tsp basil

1 tsp garlic powder

2 slices pepperoni/cappicola, shredded



Preheat oven to 425*F

In a bowl, whisk eggs.

Mix tomato sauce, parm cheese, pepperoni/cappicola, oregano, basil & garlic powder with the eggs.

Evenly distribute the egg mixture into each pepper.

Bake for 45 minutes or until cooked through.
